2 stalks of chopped up celery A whole onion chopped up into tiny little bits 6 cloves (yeah, still chopped up or crushed...my cooking has never been to precise) garlic 6 Tsp olive oil 4 Bay leaves 8 cups of water 2 cups of lentils 3 potatoes....chopped too 1 tsp salt 3 Tbs red wine vinegar 1 tbs oregano 1 tbs basil dash of parsley flakes
Heat the olive oil in the pot, throw in the veggies and cook them for about twenty minutes. Add everything else. Cook it on a low heat. It takes a couple hours to have everything cooked, but you'll need to check up on it, stirring it every now and again and possibly adding water to make sure it doesn't burn. While not a delicacy, it's no where near bad and it keeps me fed for long periods of time. It's pretty good if you just use crackers in place of a spoon.
